V Mint Syrup

Adapted from the book Asparagus to Zucchini

½ cup mint leaves
½ cup water
1 cup sugar or ½ cup honey

Combine ingredients in a saucepan and bring to a boil. Reduce heat to low and cook until thickened (about 5 minutes). Strain if desired.

Add to hot tea, iced tea, lemonade, adult beverages–experiment!
