V Cilantro Pesto
1 cup loosely packed fresh cilantro leaves
1 cup loosely packed fresh parsley leaves
1/3 cup almonds
1 small fresh chile or 1/4 - 1/2 teaspoon cayenne pepper
2 Tablespoons lemon or lime juice
1/4 cup vegetable oil
salt and pepper to taste

Combine all of the ingredients except the oil in a food processor. When everything is well chopped, add the oil in a thin stream to form a smooth paste.

Pesto can be frozen. Prepare the pesto and put the pesto into ice cube trays. Once the pesto cubes are frozen, remove from tray and store in a zip-top bag. When using, defrost desired amount.
