Kale Crunch (Vegetable Heaven)
1 large bunch of kale (about 1 pound)
salt to taste
Preheat oven to 350°. Put foil on a baking pan and brush or spray with oil.
Wash, remove stems and chop kale. Spread in pan. Bake 10 minutes, stirring once or twice. Sprinkle with Parmesan cheese and bake 10 – 15 minutes more; stirring occasionally. Bake to desired crispness. Salt to taste.
