Old Fashioned Soft Pumpkin Cookies
Makes 3 dozen cookies
2 cups all purpose flour
½ cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon (heaping)
½ teaspoon ground nutmeg (heaping)
½ cup butter (1 stick)
1 cup granulated sugar
½ cup brown sugar
1 cup packed pumpkin
1 egg
1 teaspoon vanilla extract
1 cup semi-sweet chocolate morsels
Preheat oven to 350. In medium bowl, combine all dry ingredients – 1st 7 ingredients. In large mixer bowl, cream butter with the 2 sugars. Add pumpkin, egg and vanilla – beat until light and creamy. Add dry ingredients and mix well. Fold in chocolate morsels. Drop by rounded tablespoons onto greased cookie sheets or sheets lined with silicone mats. Smooth tops of cookies. Bake for 15-20 minutes or until lightly browned. Cool on wire racks.
