Charred Okra and Tomatoes(or Tomatillos)
Serves 4 and takes about 15 minutes of prep time.
1 T Olive Oil
1/2 pound okra, halved lengthwise
1/2 cup onion, cut vertically
3 garlic cloves, thinly sliced
1/2 cup plum tomatoes julienned
1/4 tsp sugar
1/4 tsp crushed red pepper - I used a hot pepper instead
1 T butter
2 tsp chopped fresh thyme leaves
1 tsp grated lemon rind
1/2 tsp kosher salt
Heat a large skillet pan over high heat. Add oil to pan, swirl to coat. Add okra in a single layer; cook, without stirring, 3 minutes or until charred. Stir. Add onion and garlic; cook 2 minutes or until lightly charred. Add tomato, sugar & pepper; cook 1 minute or until tomatoes start to break down. Remove pan from heat, stir in butter and remaining ingredients.
If substituting tomatillos for the tomatoes:
Use 1/2 cup peeled, julienned tomatillo instead of plum tomato.
Swap 2 tsp chopped fresh oregano for the thyme.
Substitute 1 tsp grated lime rind for lemon rind.
