V Garlic Roasted Peppers
4 Cups (1-inch) sliced or chopped bell pepper
1 Tablespoon olive oil
8 garlic cloves (you can adjust to your taste)

Line a jelly roll pan with foil. I’ve also used a glass lasagna pan lined with foil. Combine peppers, oil and garlic on the pan. Bake at 400 degrees for 30 minutes stirring after 15 minutes. You may want to cook for a few extra minutes. This recipe will not have them be blackened, and you eat them with the skins on.
