V Standard Roasted Peppers
Cut bell peppers in half lengthwise; discard seeds and membranes. Place pepper halves, skin sides up on a FOIL-LINED baking sheet or broiler tray; flatten with hand. Broil 3 inches from heat for 10 to 12 minute or until blackened. Place in a zip-top plastic bag; seal and let stand for 15 minutes. This will loosen the skins and make peeling them easy. Peel and discard skins. Store roasted peppers in an airtight container in the refrigerator.
