V Sweet Annie's Kale Salad
Adapted from How We All Went Raw by Charles Nunguesser, Caroline Nunguesser and George Nunguesser. Ready in about 15-20 minutes. See below recipe for alternate dressing.
1 bunch kale, tough stems removed and roughly chopped
1/4 cup extra virgin olive oil
1/4 cup raw honey
green or red onion diced - amount to taste, optional
1/2 cup of diced crunchy veggie from farm: kohlrabi, radish or carrot
1 clove garlic, minced
1/2 cup raisins or dried cranberries
2 tablespoons pine nuts, toasted slivered almonds or sunflower seeds
Crumbled feta cheese, optional
In a large bowl mix together the kale, olive oil, honey and garlic. Gently massage the mixture for about 5 minutes. The kale will become velvety in texture and the flavor will mellow. Add the raisins and pine nuts and toss together.
Alternate dressing:
1 Tablespoon honey
Juice of 1 lime
3 Tablespoons olive oil
Dash of rice vinegar
Salt and fresh ground pepper to taste
