V Salad Greens with Chinese Salad Dressing
From Asparagus to Zucchini, 3rd Edition; this recipe is from Oak Ridge Farm; makes about a 1/2 cup of dressing. This dressing is good with all sorts of greens, as well as bok choy, snow peas and cucumbers.
1/3 cup sesame or olive oil, sesame oil is strong so I use mostly olive oil with about a tablespoon of sesame oil
1 teaspoon minced garlic, pressed to a paste, or 1 Tablespoon chopped garlic scapes
1-2 teaspoons grated fresh ginger or 1/4 teaspoon dry ginger powder
dash of cayenne
2 Tablespoons fresh lemon juice
1 teaspoon sesame seeds
1 Tablespoon chopped green onion
salad greens
Wisk together all ingredients except salad greens. Place greens in large bowl, pour dressing over greens and mix well.
