Roasted Cabbage
The orginal recipe came from Martha Stewart. Ready in under 30 minutes. Make as many or as few portions as you want.
1 cabbage, cut into 1/2 to 3/4 inch slices
Seasoned salt, to taste, or whatever dried herbs you like, such as oregano, thyme or basil
3 Tablespoons extra virgin olive oil
Blue cheese crumbles, or other shredded cheese, such as gruyere, swiss or cheddar
Preheat oven to 400 degrees. Brush a rimmed baking sheet with 1 tablespoon extra-virgin olive oil. Place 1 head green cabbage, cut into 1/2-1 inch-thick rounds, in a single layer on sheet and brush with 2 tablespoons oil. Sprinkle with seasoned salt or salt, pepper and herbs and the cheese. Roast until cabbage is tender and edges are golden, 20 to 30 minutes.
