V Herbed Roasted New Potatoes

1 large shallot or medium onion, coarsely chopped
1 large clove garlic, minced
1 bay leaf, crumbled
1 Tablespoon fresh thyme, chopped
1 Tablespoon fresh sage, chopped
1 Tablespoon fresh oregano, chopped
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 cup olive oil
16 new potatoes, or larger fresh potatoes cut up
Blend together onion, garlic and herbs along with salt and pepper in a blender or food processor. Add oil and continue to blend until onion is finely chopped. Place 1/3 cup of mixture into a large bowl. Add potatoes and toss well. Transfer potatoes to an oiled baking dish and bake in a 375 degree oven, turning every 10 minutes for even browning, until easily pierced with a fork, about 45 minutes. Transfer potatoes to a bowl, and drizzle with the remaining herb mixture.
