V Cabbage Soup
Member Susan Gran sent the following recipe saying she didn't even think she liked cabbage until she made this. Takes about 90 minutes to make
3 tablespoons olive oil
1 onion, chopped
2 carrots, chopped
6 cups organic chicken broth
2 cups water
1 teaspoon salt
1/2 teaspoon black pepper
1/2 head cabbage, cored & coarsely chopped
4-5 fresh tomatoes, chopped (or 14.5 ounce can of chopped tomatoes drained)

In a large stock pot, heat oil over medium heat. Stir in onion and carrots; cook until onion is transparent, about 10 minutes.
Stir in water, broth, salt and pepper. Bring to a boil, then stir in cabbage. Simmer until cabbage welts, about 10 minutes.
Stir in tomatoes and seasoning. Return to a boil, then simmer for 45 to 60 minutes, stirring often.
