V Baked Eggplant Tapas

1 eggplant - skin left on
generous pinch of salt
2 Tablespoons honey
1 Tablespoon olive oil
1 teaspoon ground cinnamon
chopped fresh cilantro, for garnish
plain Greek yogurt as topping (optional)
Preheat oven to 350. For a large eggplant cut in half and then each half into 4's for 8 total pieces. Use more eggplants cut into fewer pieces if they are not large. Mix salt, honey, olive oil and cinnamon in a bowl and brush on cut sides of eggplant.
Bake in oven for 20-25 minutes until golden brown. Top with chopped cilantro and a dollop of plain Greek yogurt if desired.
Leftovers are great in sandwiches.
