Beet Burgers

2 cups grated peeled raw beets (about 12 ounces)
2 cups grated raw carrots
1 cup cooked brown rice
1 cup grated cheddar cheese
1 cup sunflower seeds, toasted
2 large eggs, beaten
1/2 cup sesame seeds, toasted
1/2 cup grated onion (about 1 medium)
1/4 cup vegetable oil
3 Tablespoons flour
3 Tablespoons fresh parsley, chopped fine
2-4 garlic cloves, finely chopped
2 Tablespoons soy sauce
ground red pepper to taste

Preheat oven to 350 degrees. Generously grease a rimmed baking sheet. Combine all ingredients in a large bowl. Form the mixture into patties and bake 25-30 minutes, until firm and the vegetables are cooked through.
