V Lemony Carrot Salad with Dill

Eating Well; serves 4; ready in about 15 minutes -- plus chilling time

2 Tablespoons fresh lemon juice
2 Tablespoons EVOO
1 small clove garlic, minced
salt and freshly ground black pepper, to taste
2 cups grated carrots (about 4 medium)
3 Tablespoons chopped fresh dill
2 Tablespoons chopped scallions

Whisk lemon juice, oil, garlic, salt and pepper together in a medium bowl. Add carrots, dill and scallions; toss to coat. Chill until serving time. Cover and refrigerate for up to 2 days
